Blueberry Muffins

 

Ingredients:

                                     

           

1/2 cup butter or margarine, softened

1 cup sugar

2 eggs

1/2 cup milk   

1 tsp. vanilla extract

2 cups all-purpose flour

2 tsp. double-acting baking powder

1/2 tsp. salt

2-1/2 cups blueberries

Sugar for sprinkling tops of muffins

 

Directions:

 

            Grease 12 or 18 cup muffin pan.  Preheat oven to 375.

            In large bowl with mixer at medium speed, cream butter and sugar until light and fluffy.  Add eggs, one at a time, beating well after each addition.  Combine flour, baking powder, and salt.  Add alternately to creamed mixture with milk and vanilla.

            (Optional step:  Crush 1/2 cup berries and add to batter.)  Fold remaining berries into batter and spoon into muffin pan.  Sprinkle with sugar.  Bake 30 minutes or until toothpick inserted in center comes out clean.  Cool in pan 5 minutes and turn onto wire rack.

Cinnamon Rolls   (This recipe was obtained from the Okapilco School cafeteria staff in the 1970's.)

(Makes 50)

 

Ingredients:

 

6 pkgs. yeast  

1 cup warm water

2 qt. + 4 Tbsp. all-purpose flour

1-1/3 cup dry milk  

1 cup sugar  

1-1/2 tsp. salt 

2 cups + 1 Tbsp. warm water

1 cup + 6 Tbsp. oil    

3 eggs

1-1/2 tsp. vanilla

Cinnamon mixture: 

                             

4 Tbsp. cinnamon           

1-1/2 sticks melted butter 

1 cup sugar

 

 

 

 

 

Directions:

 

            Mix yeast with one cup warm water.  Set aside and let rise 10 minutes.  Sift flour, dry milk, 1 cup of sugar, and salt together.  Put two cups plus 1 Tbsp. warm water in large mixer bowl.  Add oil slowly.  Add risen yeast mixture.  Add eggs one at a time.  Add vanilla.  Then add flour until soft dough.  If not enough flour, add a little more until it is a firm, but not stiff, dough.  Roll out dough like for jelly roll, about 1/2 inch thick. 

 

Take melted butter and brush some on top of dough.  Mix 4 Tbsp. cinnamon and 1 cup of sugar.  Add enough melted butter to moisten this mixture.  Spread on top of dough.  Roll up like jelly roll.  Cut into 1-inch pieces.  Place on buttered pans with sides.  Let rise for one hour (in warm place).  Bake in a 350 degree oven for 12 minutes or until brown. 

           

Frost with confectioner’s sugar frosting or glaze.

Done & Buttered Biscuit

   

 

2 C.Bisquick    

1 stick butter/margarine  (melted)

1 (8 0z.) carton Sour Cream

 

Mix Sour Cream and Bisquick .  Add melted butter & mix well.  Fill greased muffin tins 3/4 full and bake at 425o for 10 to 12 min.
